Since we often have people over for drinks and snacks, and very often it's a last minute decision, it's super handy to have a few quick, "throw together" recipes that are achieved with little effort, while still giving the maximum in flavor and therefore, "wow factor".
If you were to take the three ingredients from this recipe and give them to a professional chef and say, "Make a dish using only 2 more ingredients!" They might grab an egg & poach it, sautéed some asparagus & cut them in half lengthwise (allowing them to bend and not break), mix the cream cheese with the dill, spread it out in a perfect circle with the back of a spoon on a plate, lay the delectable pieces of salmon atop the sauce, curl the asparagus into a small nest and set the poached egg atop looking as if it's waiting to "hatch". "Et voilá!" FANCY!
It's such a classic set of flavors, that truthfully, you cannot go wrong here! It's a guaranteed crowd pleaser.
To make this dip, all you need is a food processor that has a double blade, like a cuisinart. You literally put all three ingredients into the machine and pulse, until it all comes together into a smooth consistency. But if you want the salmon to be chunky, simply, pulse it less. Make it how you like it!
Smoked Salmon & Cream Cheese Dip
300 g philadelphia cream cheese
100 g smoked salmon
1 T dried dill
s&p to taste
For snacks with friends, I love it spread on crackers because the crunchy texture goes well with the creaminess of the dip itself.
And....If you want to get fancier here, don't let me stop you! You can use fresh herbs (instead of dried) like dill or chives, add the zest of 1 lemon and some juice to taste or sauté some asparagus and chop them into small rounds (then gently mix them in). Get creative or stay simple. Do what works for you! But either way you choose to go, it's a winner!
If you have any leftover the next day, it's also delicious spread on toast in the morning with an egg cooked any way you like. Or it can be mixed in with veggies sautéed in olive oil to make a fast pasta sauce. Tip for the sauce, add lots of lemon zest & juice!
