This is a summer staple for every table. It's super fast to throw together and full of summer flavor. You could serve it with fish, scallops or chicken as a main dish. Or you could turn it into a panzanella salad with some toasted, day old bread for a perfect, light summer dish. Give the freshness a try.
Cherry Tomato & Feta Salad
serves 4-6
700 g cherry tomatoes
300 g feta cheese
100 ml good quality olive oil
20 g fresh basil (leaves only)
2 t aged balsamic vinegar
fresh baguette or ciabatta bread for dipping into the leftover sauce
salt & pepper
Cut the cherry tomatoes in half. Julienne the basil very thin. Crumble the feta. Throw all together into a mixing bowl. Season with salt & pepper, add the oil, chopped basil and aged balsamic. Mix gently and plate. Don't forget to dip the bread...Voilá!
